The way it's brewed

  1. Boil the knotted blades 5–7 minutes till the kitchen smells like the yard after rain.
  2. Steep 5 more, off the fire.
  3. Honey and lime in the cup. Calms the throat, the belly, and the whole evening.

Ginger Tea, Proper

  • 2 cups water
  • Honey Β· lime Β· tiny pinch of clove

The way it's brewed

  1. Boil the grated ginger 10 whole minutes β€” proper ginger tea is BREWED, not waved at hot water.
  2. Strain, honey, lime.
  3. For belly, cold, nausea, and bad-day repair.

Sorrel, Deep & Spiced

  • 6 cups water
  • Ginger, clove, orange peel, cinnamon
  • Demerara sugar

The way it's brewed

  1. Boil sorrel and spices 10 minutes; steep till ruby-dark and moody.
  2. Strain, sweeten, chill deep.
  3. Over ice β€” foundation-day red, rich in the good stuff.

Cocoa Tea, Morning-in-Berbice

  • 3 tbsp grated cocoa stick
  • 1 cinnamon stick + 1 bay leaf
  • 3 cups water Β· 1 cup milk
  • Sugar, salt-pinch, nutmeg

The way it's brewed

  1. Boil water with cinnamon and bay; whisk in cocoa; simmer 10–15 till the oils rise.
  2. Milk in, sweeten, warm through.

Milk Tea, Made Proper
